When people tell me they don't like Coconut Cake, I tell them, "It's because you haven't tried mine." The most important part of a Coconut Cake is incorporating coconut throughout the entire cake, not just the frosting. It also means using all parts of the coconut which includes the coconut shavings (flakes), milk, cream and juice. Yes, it's a lot, but it makes all the difference. If you are looking for all of these ingredients, I suggest going to your local Asian market; you will find every version of coconut conceivable.
