Nothing says good morning St. Patty's Day like the smell of freshly baked Irish Brown Soda Bread. Pair it with a little jam or butter for a delicious breakfast to start off your green-filled day.
Irish Brown Soda Bread
Serves 8
Ingredients
1 3/4 cups all-purpose flour
1 3/4 cups whole wheat flour
3 tbsp wheat bran, toasted
3 tbsp wheat germ, toasted
2 tbsp rolled oats
2 tbsp packed dark brown sugar
1 tsp baking soda
1/2 tsp salt
2 tbsp unsalted butter, chilled and cut into pieces
2 cups buttermilk
Directions
Preheat oven to 425 degrees F. For round loaves grease a large baking pan, for a loaf grease a 9x5x3-inch loaf pan.
Combine the first eight ingredients in a large bowl and mix well. Add butter; rub in with fingertips until mixture resembles fine meal. Stir in enough buttermilk to form soft dough; note that all of the buttermilk may not be needed, just make sure it doesn't get too wet.
Transfer the dough to the prepared baking or loaf pan. Bake until bread is dark brown and tester inserted into center comes out clean, about 40 minutes. Turn bread out onto rack, turn rightside up and allow time to cool.
