Irish Coffee


Need a pick-me-up after work or have you been partying all day and need something to keep you going? Well, try some Irish Coffee. It should give you the jolt you need to make it to your St. Patty's Day dinner.

Irish Coffee

Serves 2

Ingredients
6 tsp turbinado sugar
3 oz Irish whiskey
4 oz espresso
4 oz water
3 oz heavy cream
2 fresh mint leaves

Directions
Place 4 teaspoons of sugar, the whiskey, espresso and water in a small saucepan and stir to combine. Set over low heat and stir occasionally until the sugar dissolves and the mixture is hot but not boiling, about 5 minutes.

Place the remaining 2 teaspoons of sugar and the cream in a medium bowl and whisk until the cream thickens and the sugar has dissolved, about 2 minutes.

Transfer the hot coffee mixture to two 8-ounce glasses or mugs, top with a heaping spoonful of the cream and garnish with the mint leaves. Serve immediately.
