Citrus Curd


I don't know about you, but I think cakes with fruit fillings are absolutely the best. A fresh fruit filling or curd can turn a simple cake into such a delight. One filling I like to use is my Citrus Curd that is a combination of oranges and lemons. It's quite a simple recipe and one that uses a microwave to prepare. Who knew that making curd could be so easy?

Citrus Curd

Makes 2 cups

Ingredients
1 cup sugar
3 eggs
1/3 cup fresh orange juice
2/3 cup fresh lemon juice
zest of 2 oranges
zest of 3 lemons
1/2 cup unsalted butter, melted

Directions
In a microwave safe bowl, whisk together sugar and eggs until smooth. Whisk in the remaining ingredients until combined.

Microwave the curd mixture in one minute intervals until it is thick enough to coat the back of a metal spoon. (It takes me approximately 7 one minute intervals to gain the proper consistency.) Cool in the refrigerator before use.
